Energy Bites 3 Ways: Vanilla Protein, Chocolate Happy Cacao & Daily Greens

The recipes I love most are the ones that are genuinely simple but leave you wondering how something so easy could taste so good. These energy bites are that recipe. Three flavors. One base. 15 minutes. And then a week's worth of snacks waiting in your fridge.

The base is the foundation: rolled oats, nut butter, maple syrup, and sea salt. It is the perfect canvas — neutral enough to let each superfood addition shine, sticky enough to hold everything together without any added binding agents.

Version 1 with Vanilla Protein is the classic. Pea, Sacha Inchi, Sunflower, and Pumpkin Seed Proteins with Mesquite and Vanilla — clean and creamy with a coconut finish. Sacha Inchi from the Amazon is one of the most complete plant proteins in existence, containing all essential amino acids and omega-3 fatty acids. Zero sweeteners, zero gums, zero fillers. In a bite that tastes like a vanilla cookie.

Version 2 with Happy Cacao is the one that disappears first. Always. Ceremonial Cacao with Reishi Mushroom (the mushroom of immortality in TCM) for calm, Lion's Mane for brain clarity and mood, Lucuma for natural sweetness, and Coconut Milk for creaminess. The Base Recipe (makes ~12 bites)

Ingredients:

  • 1 cup rolled oats

  • 1/2 cup almond butter or peanut butter

  • 3 tbsp maple syrup

  • Pinch of sea salt

Version 1: Vanilla Protein Bites

Add to base: 3 tbsp Vanilla Protein + 2 tbsp coconut flakes.

Version 2: Chocolate Happy Cacao Bites

Add to base: 3 tbsp Vanilla Protein + 6 tsp Happy Cacao + optional dark chocolate chips.

Version 3: Daily Greens Power Bites

Add to base: 2 tsp Daily Greens + 2 tbsp hemp seeds + 1 tsp lemon zest.

Instructions (all versions):

  1. Mix your base ingredients together in a bowl until well combined.

  2. Add your version-specific ingredients and mix again thoroughly.

  3. Check consistency: if too dry, add 1 tsp extra nut butter or maple syrup; if too wet, add a few more oats.

  4. Roll into balls using your hands — about 1 heaped tablespoon each.

  5. Place on a plate or in a container and refrigerate for at least 30 minutes before eating.

  6. Store in the fridge up to 1 week or freeze up to 1 month.
