I have always believed the best healthy snacks are the ones that don't announce themselves. They just taste good, and your body quietly gets exactly what it needs.
These Green Lemon Balls are that snack. They look like little sunshine-colored truffles. They taste bright, zesty, and just sweet enough — like a lemony dessert bite that happens to be made entirely from whole plants. And inside each one is Daily Greens.
Daily Greens contains Wheatgrass, Barley Grass, Moringa, Baobab, Spirulina, and Chlorella — some of the most researched, most nutrient-dense greens in existence. Moringa has been called the miracle tree in Ayurveda for centuries: rich in iron, calcium, protein, vitamins A, C, and E. Spirulina is one of the few plant sources of complete protein and has been used as a superfood since the time of the Aztecs. Chlorella is deeply detoxifying — it binds to heavy metals and helps carry them out of the body. Baobab is a prebiotic powerhouse and one of the richest plant sources of vitamin C in the world.

Green Lemon Balls
Ingredients (makes ~14 balls):

1 cup raw cashews

1 cup pitted dates

4 tsp Daily Greens

Juice of 1 lemon

Zest of 1 lemon

Optional: extra lemon zest or shredded coconut for rolling
Instructions:

Add cashews to a food processor and blend into a rough flour.

Add dates, Daily Greens, lemon juice, and lemon zest.

Blend until the mixture sticks together when pressed between your fingers.

If too dry, add 1 tsp water at a time. If too wet, add a few more cashews.

Roll into small balls using your hands — about 1 tablespoon of mixture each.

Optional: roll finished balls in extra lemon zest or shredded coconut.

Refrigerate for at least 30 minutes. Store in the fridge up to 1 week or freeze up to 1 month.
