I used to think breakfast had to be sweet. It was such a deeply ingrained assumption — that breakfast meant yogurt, fruit, granola, oatmeal, smoothies. And I love all of those. But somewhere along the way, I discovered what the rest of the world has known for centuries: a warm, savory breakfast is one of the most nourishing, grounding, satisfying ways to start the day.

In Japan, breakfast is often rice with miso and pickles. In India, it might be lentils and flatbread. In the Middle East, it could be hummus and vegetables. The idea that breakfast must be sweet is largely a western, modern marketing invention. Our bodies do not actually know or care what time of day it is — they just want nourishment.

This Savory Breakfast Power Bowl delivers that nourishment in the most complete way I know. A warm base of quinoa or brown rice (both prep beautifully in advance). Creamy white beans warmed gently with olive oil and salt. A handful of fresh arugula for bitterness and iron. Sliced avocado for healthy fat and that morning-grounding energy. A sprinkle of pumpkin seeds for zinc and crunch. And then the Daily Greens Tahini Sauce: tahini, lemon, Daily Greens, maple syrup, water. Savory Breakfast Power Bowl

Ingredients (serves 1):

  • Base: 1/2 cup cooked quinoa or brown rice (warm)

  • Protein: 1 cup white beans, drained and warmed in a pan with a pinch of salt and 1 tsp olive oil

  • Greens: handful of arugula or spinach

  • Toppings: 1/2 avocado (sliced), sprinkle of pumpkin or sunflower seeds, salt and pepper

Daily Greens Tahini Sauce

Ingredients:

  • 2 tbsp tahini

  • Juice of 1/2 lemon

  • 1 tsp Daily Greens

  • 1–2 tbsp water to thin

  • Pinch of salt

Instructions:

  1. Cook or reheat your grain of choice.

  2. Warm white beans in a small pan with olive oil and a pinch of salt for 2–3 minutes.

  3. Whisk together all tahini sauce ingredients until smooth. Add water to reach a drizzleable consistency.

  4. Assemble the bowl: start with your warm grain base, then add white beans, arugula, and sliced avocado.

  5. Drizzle generously with Daily Greens Tahini Sauce.

  6. Add seeds, salt, and pepper. Serve immediately.

Meal Prep Tip
