Sprouty Tacos: The Quick, Fresh, Plant-Powered Lunch I Make Every Week

Some lunches are complicated… and some are the kind you crave constantly because they’re so fresh, so simple, and so satisfying. Sprouty Tacos are that lunch for me.

They take just a few minutes.
They’re loaded with plants and living nutrients.
And they’re endlessly customizable.

One of my favorite parts?

You can pile on SO many sprouts — alfalfa, broccoli, sunflower, radish — and rotate them each week for different nutrients and textures.

🌽 Why Sprouted Corn Tortillas?

We always use organic sprouted corn tortillas because sprouting makes grains easier to digest and more nutrient-available.

A few tips:

  • Buy organic sprouted corn tortillas

  • Store them in the freezer so they stay fresh

  • Pull out 1–2 at a time

  • Warm them in a skillet or toaster

You get a fresh tortilla every time.

🧄 The Creamy Tahini Garlic Sauce 

Instead of garlic powder or garlic spread, I now make this super simple tahini sauce:

Tahini Garlic Sauce

  • 1 tbsp tahini

  • ½–1 tsp garlic powder

  • Squeeze of lemon juice

  • 1–2 tbsp water to thin

  • Optional: 1 tsp Daily Greens

Stir together with a fork until creamy.

This sauce adds healthy fats, creaminess, minerals, and flavor — and mixes beautifully with the sprouts and veggies.

 


 

🥬 Sprouty Tacos Recipe 

Ingredients:

  • 2 organic sprouted corn tortillas

  • Tahini garlic sauce (recipe above)

  • ½ avocado, sliced

  • Fresh tomatoes, chopped

  • Cucumber slices (optional)

  • Optional canned black beans, rinsed well

  • Clean sriracha (like Yellowbird)

  • Sprouts of choice: alfalfa, broccoli, sunflower, microgreens

Instructions:

  1. Warm tortillas in a skillet or toaster.

  2. Spread a thin layer of tahini garlic sauce.

  3. Add sliced avocado.

  4. Add tomatoes and cucumber.

  5. Add a spoonful of rinsed black beans if you want extra fiber + plant protein.

  6. Pile on a huge handful of sprouts — as many as you can fit!

  7. Drizzle clean sriracha.

  8. Fold and enjoy right away.

A fresh, crunchy, creamy, nourishing lunch.
