Rainbow Salad with Turmeric Dressing (Colorful, Anti-Inflammatory & Delicious)

Why I Love Rainbow Salads

Whenever I need a reset, I turn to colorful raw salads. Eating the rainbow isn’t just pretty—it ensures you’re getting a wide variety of antioxidants, vitamins, and minerals in every bite.

This Rainbow Salad with Turmeric Dressing is one of my go-tos. It’s crisp, refreshing, and loaded with plant goodness. The real star, though, is the turmeric dressing: tangy, creamy, and anti-inflammatory. Honestly, I recommend making a bigger batch and keeping it in the fridge—it’s amazing on bowls, wraps, and even roasted veggies.

🌈 Rainbow Salad Recipe 

Ingredients (serves 2–3):

Salad:

  • 3 cups mixed chopped colorful veggies (carrot, cucumber, radish, cabbage, bell peppers, etc.)

Turmeric Dressing:

  • 2 tsp SuperPlants Healing Turmeric

  • 2 tbsp mustard

  • 1 tbsp olive oil

  • Juice of 1 lemon

  • 1 tsp garlic powder

  • Optional: 1 tsp maple syrup and/or 1 tbsp coconut aminos

  • 2–4 tbsp water, to thin

Instructions:

  1. Chop all veggies into bite-size pieces and add to a large bowl.

  2. In a small jar or bowl, whisk or shake together all dressing ingredients until smooth. Adjust water to desired consistency.

  3. Pour dressing over salad and toss to coat.

  4. Serve immediately, or store dressing in the fridge for up to 5 days.
