2-Ingredient Buckwheat Bread: Simple, Clean & Naturally Gluten-Free

If you’ve been wanting a clean, gluten-free, flour-free bread you can make at home without complicated steps — this is it.

2-ingredient buckwheat bread is one of the simplest, most nourishing recipes I’ve ever made, and it’s been part of our weekly routine for years.

Just whole buckwheat groats + water → blended → baked.

No yeast.
No flour.
No oils.
No gums or binders.
Just plants.

And it always turns out delicious.

 


 

🌾 Why Buckwheat Is So Healthy

Buckwheat isn’t actually wheat — it’s a mineral-rich seed that’s naturally:

  • gluten-free

  • high in magnesium, iron & zinc

  • supportive for gut health

  • alkaline-forming

  • high in plant protein

  • rich in rutin — an antioxidant that supports circulation

It digests easily, helps steady blood sugar, and keeps you full thanks to its fiber and protein.

When soaked, buckwheat becomes soft and gel-like — perfect for making bread without needing flour.

 


 

🍞 2-Ingredient Buckwheat Bread (US Version)

Ingredients:

  • 3 cups raw buckwheat groats

  • 3-4 cups water (just enough to cover while soaking + for blending)

  • Optional: ½ tsp salt

Instructions:

1. Soak the buckwheat overnight

Place groats in a bowl and cover with water just until submerged.
Let sit 8–12 hours.
(They will become soft, gel-like, and slightly thick — this is perfect!)

2. Blend the entire mixture

Do not drain the water.
Add everything — soaked groats + soaking water — to a blender.
Blend into a smooth, thick batter.

3. Ferment (optional but recommended)

Pour batter into a bowl, cover with a cloth, and let sit 2–4 hours.
This helps the bread rise and improves digestion.

4. Bake

Pour batter into a lined loaf pan.
Bake at 375°F for 45–55 minutes, until firm and lightly golden.

Let cool fully before slicing.
