Why Pumpkin Curry is the Perfect Fall Comfort Food

As the days get shorter and the weather cools down, I always crave warming, grounding meals—and pumpkin curry is one of my absolute favorites. Pumpkins are in season during fall and winter, making this dish not only cozy but also sustainable and nourishing.

The best part? You can use any type of pumpkin you find locally—butternut, sugar pumpkin, kabocha, or whatever’s available. The flavors pair beautifully with coconut milk, ginger, and turmeric.

This pumpkin curry is:

  • Creamy, rich, and satisfying

  • Packed with plant-based protein & fiber

  • Boosted with anti-inflammatory turmeric

  • Easy to make in under 40 minutes

 


 

🥘 Pumpkin Curry Recipe

Ingredients (serves 4):

  • 1 medium pumpkin (about 3 cups sliced, skin on, seeds removed)

  • 1 onion, chopped

  • 2 inches fresh ginger, (large slices so you can remove it after cooking)

  • 2 cups cauliflower or broccoli florets

  • 1 cup peas or 1 can white beans (for protein)

  • 1 can (14 oz) coconut milk

  • 4–6 tsp Healing Turmeric

  • 1 tsp black pepper

  • 1 tsp sea salt (to taste)

  • Optional: fresh cilantro + lime for serving

Instructions:

  1. Heat a splash of olive or coconut oil in a large pot. Add onion and ginger, sauté until fragrant.

  2. Add pumpkin slices, cauliflower/broccoli, and peas or beans. Stir well.

  3. Pour in coconut milk and 1 cup water. Bring to a simmer.

  4. Stir in Healing Turmeric, black pepper, and salt. Simmer for 20–25 minutes until pumpkin is tender.

  5. Taste and adjust seasoning. Serve with rice, quinoa, or warm flatbread.

  6. Garnish with cilantro and lime
