The Frozen Snack That Disappears Every Single Time
I genuinely cannot keep this in the house. Every single time I make it, it is gone within two days — and half of it disappears on the day I break the first piece.
The Frozen Yogurt Bark started as a way to get more Beauty Berries into our kids' snack rotation without any fuss. It worked better than I ever imagined. They love it. Their friends love it. Adults who come over for dinner ask if they can have some.
The science behind why this is so good for you is genuinely exciting. Beauty Berries contains Chia, Acai, Maqui, Acerola, Aronia, and Blueberry — some of the most antioxidant-dense foods on the planet. Maqui berry has the highest antioxidant ORAC score of any fruit ever tested. Acerola is nature's most bioavailable vitamin C — far more absorbable than any synthetic vitamin C supplement — and vitamin C is essential for collagen production, immune function, and glowing skin. Aronia, sometimes called the superberry of Eastern Europe, has been studied extensively for heart health and inflammation. Acai from the Amazon brings healthy fats alongside its antioxidants.
Stir all of that into creamy coconut yogurt, which adds probiotics for gut health. Spread it with intention. Scatter your favourite toppings. Freeze overnight. And then just break it into pieces whenever you want something beautiful.
This is what plant-powered snacking looks and tastes like.
Frozen Yogurt Bark Recipe
Ingredients:
-
1 cup coconut yogurt (or any plant-based yogurt — full-fat works best)
-
4 tsp Beauty Berries
-
Handful of fresh or frozen berries (blueberries, raspberries, or strawberries)
-
Sprinkle of nuts (almonds, walnuts, or pistachios)
-
Optional: drizzle of almond butter, coconut flakes, cacao nibs, edible flowers, granola
Instructions:
-
Line a baking sheet or flat plate with parchment paper.
-
Mix Beauty Berries into the coconut yogurt until fully combined and a beautiful pink-purple color appears.
-
Spread the yogurt onto the parchment in an even layer, about 1/4 inch thick.
-
Scatter berries, nuts, and any optional toppings evenly over the surface.
-
Transfer to the freezer for at least 3–4 hours, or leave overnight.
-
Remove, break into irregular pieces, and serve immediately. Store any extras in a freezer-safe container.
Tips for the Best Bark
-
Full-fat coconut yogurt gives the creamiest result — worth the extra richness.
-
Work quickly once you start spreading — in a cold kitchen the yogurt can begin to set fast.
-
Keep bark in the freezer right up until serving — it melts within minutes at room temperature.
-
Add mango, kiwi, pomegranate seeds, or granola for seasonal variations.
